Literally the only thing you have to do with a french knife is hold it at the base of the blade and not on the handle.

A layman who holds the knife by the handle would still be able to get shit done, but without the same degree of control and speed. Do you really need speed if you are an amateur who isn't chopping like 100 onions a day?
