I mentioned this in another Gordon thread, but here goes again. If you have to crush the burger to get a bite due to its hight you're doing harm to the texture. tomatoes squished, pickles mushed, sauce and grease dripping. It may not distort the flavor very much, but it will harm mouth feel and provide a sub par experience. Any chef of worth should understand the logistics of how something is eaten will affect the dish and should avoid such a hobbyists level mistake. Tall burgers are retarded and make me sad.
