anybody else use these a lot in cooking? I've started substituting these for green onions since they have a less abrasive taste. Especially since the gf hates any kind of onions.

We use them at home, and they are very easy to grow. If you grow them you can always have a fresh supply. Yesterday I cooked a beef and tomato casserole and had a side dish of potatoes cooked with garlic chives and powdered dried shrimp. It was a bit disappointing as the chives have started to go woody. If you grow them They are best in spring.

Onion aversion is damn common. I think for most haters it's a slimy texture thing, but it's also digested to be excreted in body fluids, literally out of your pores.

They're delicate so for actually cooking in a recipe, no, they're a garnish or to be folded in near the end. They'll break down to overcooked in short order and might not even be tasted much.

As a substitute for onions, well, good for you, you have to work around whatever oddities your gf has going on. Since chives are actually onions, you found a good trick. I suggest you try sneaking some leeks into some recipes next

I used to shop at a market in HollywoodFL, and the owner had a glass case in the back of various kimchees. I never bought any except the scallions version, which was about the best thing I ever tasted.
