I made tortillas with duck fat in them and I also made a gumbo roux with duck fat. :) you can also confit things in it, such as chicken or veggies. Use it to throw in a bag with your protein if you Sous Vide. Make duck fat hollandaise, or just wear your food in duck fat. Duck fat vinaigrette or make a rillette with duck fat in it. What did you add to the fried rice? If you use a more strongly flavored fat then I find you need to increase the acidity or else like you said it'll seem like something is missing. Try adding some kind of pickled vegetable or sour condiment or even just a little vinegar.
