It's not that hard bro. Whenever I cut meat I transfer it to a bowl then rinse the cutting board under hot water, squirt dish washing liquid on it, give it a good scrub, rinse off with hot water then let it dry off in the dish rack. For the bench just give a quick spray, wipe it off then rinse out your cloth well (which you should be doing anyway). Once you get used to cleaning up as you go this will all just become regular routine stuff.

I just cut my vegetables first, then put them in separate bowls based on cooking time. It probably doesn't matter all that much what order I cut things in though since I generally stir fry and everything's eventually going into a hot wok. I use 1 big wooden spoon to stir it from beginning to end, cook by look & feel, and sometimes accidentally leave cooked meat out overnight. It's still fine the next day.

The reason the rules seem stringent is the volume of food and revolving door of staff create lots of opportunity for fuck up.
