At the very least, brining is a good thing because it makes things taste better. I can see eschewing modern techniques that don't add anything, but I'll make use of them when they actually make stuff good. I'm all about natural wood or lump charcoal, but fuck if that bitch isn't wired with sensors so I can drink until I can't see straight and still know that the cook will do ok without me.
