there could be a few things happening here, but i'll tell you my favorite pet theory.

basically, your brain filters out information that is repetitive. it's part of the reason why you can't smell yourself, but you can smell other people. or why a guest in your home is annoyed at some sound that you have long ago filtered out.

you may have heard "the best meal is the one you don't have to cook yourself" and there's some truth here. the more you spend time around a pot of chili, the less you will taste of it.

weeks later you thaw out the chili and it goes straight from the microwave to a bowl.

the satisfaction of having basically free food + absence of olfactory fatigue = better tasting food

To me the appeal of chili (or any slow homecooked meal) is that you're around and smelling it and waiting for the moment when you finally get to try it. Works the best if you don't eat lunch that day.
