Roux is flour and fat that's cooked together to thicken liquids. It's how you make gravy or a nice stew.

This will trigger euros but I made lasagna once with cottage cheese and it wasn't bad. Italians can't even agree on what cheeese to use so they can get fucked

the first so called "lasagna" dish, aka layers of lasagna (flat rectangles of egg pasta) and meat and cheese, come from Naples
they used to use provola or mozzarella, generic meatballs, and ricotta
enter the bolognese folk
they started layering lasagna made with a bit of spinach with bolognese sauce/ragú and bechamel
that became the most famous type of lasagna dish in Italy, and by and large in the whole world
so people started putting bechamel in lasagne around 200 years ago in Bologna, and now everyone everywhere is doing it
