Going to be cooking dinner at the end of a date with a vegetarian/possibly vegan girl, what can I make that will really impress her? My cooking skill is moderate, but my skill with the ladies is considerably lower than that, and I'm not entirely sure what would be appropriate. Was thinking of making some kind of mushroom crepe, but if it turns out she's actually vegan I'd be boned on that one.

do some indian chickpea dish then.
chopped onions and peppers, sauteed with tomato paste, cumin, paprika, chili flakes, sugar (or maple syrup), cayenne pepper, salt & pepper.
then you throw in the drained chickpeas and some baby spinach and mix all together.
goes well on rice.

If it was lunch, I'd say bahn mi.
One dish my vegetarian mother really likes is sauteed onion, shallot, garlic, and basil with some marinated bell peppers.
Find some noodles without egg to be safe, and there you go.

1. cut 1 or 2 eggplants into medium sized chunks, along with some white onions, garlic cloves and finely minced ginger
2. throw in a deep pan with a little oil, sear for a minute then add just a little bit of water and cover the pan to steam everything together; add water as needed
3. once everything is soft to your liking (ideally eggplant should be soft all through but still hold itself together), put it all in a large bowl and season with soy sauce, dark vinegar, chives and sesame oil
4. let it cool a bit, or not
It's super easy and it fucking slaps, either on its own or served with white rice

What you want to do is serve a MASSIVE bowl of greek yogurt, pineapple, and psyllium. Make her eat half of it, as you eat the rest. Argue with her if she says that yogurt isn't vegan. Make constant weird double entendres about your cum. Put on a David Attenborough documentary in the background, preferably one of the ones with explicit shots of animals being eaten by predators. Trust me on this.
