I wanted to defend it but I have to agree.. much too fibrous to be enjoyable, have to base and leaves up separate in order to get cooking time right for each. Just too much work to cook at home, but I do like it when I eat out

I feel like it was 3-5 years ago.

but yeah it's pretty mediocre. I like a crunchy green but it's too stringy raw and turns into a slimy mess even when blanched. Mustard Cabbage is better in every way.

Also complete tangent, but I have a friend who is an oncology researcher and apparently the anti-cancer potential of these kind of cruciferous veg is ridiculous. As in smokers who eat them regularly have lower cancer rates than non-smokers who don't. The cancer incidence rate in places like south china where they eat them regularly is like a quarter of provinces next door where they don't grow. Doesn't work for every kind cancer apparently...something something cell lines or some shit. Take away was, eating them 4-5 times a week is like a cheat code for cancer.

I'm a smoker too which is why we were talking about it.
I can't really "vouch" for it, oncology research is notoriously difficult because you can't really do controls.
But he was pretty convinced, like when I asked what I should be doing to lower my risks he said it was right up there with sunscreen and less well known.

North american "bok choy" grown in California or wherever the fuck is shit. Its usually light green and way too fucking big and are almost as goddamn watery as celery. Go for baby bok instead. Theyre much smaller, more flavorful, are very hearty and goes well in ramen / soups or just stir fry it in garlic and oyster sauce.
