Starch swells when heated so it can thicken a liquid. You don't really taste it in the end over the sugar and chocolate. You can also use eggs to thicken something.

That's fair. Yeah using cornstarch or flour is in nearly every recipe for chocolate pudding. It's just a thickener so there's nothing to really worry about.
