I like spinach(and other dark leafy greens) with eggs and eat them regularly - 5 times or more a week. Easy to make and think the eggs pair well with the bitterness. Down side is watching your spinach go from zomfg this will never fit in the pan, to a wilted up little pile.

Spinach is excellent. I try to use it in place of lettuce whenever I can.
I make a salad with spinach, red onion, button mushrooms and cooked a cooled shrimp, drizzled with a simple dressing of oil, white vinegar, garlic, mustard and salt and pepper.
A jap I dated turned me onto bacon and spinach spaghetti, which is literally just bacon, spinach, soy sauce and spaghetti.

I fucking hated salads. But this diet I'm on has turned my mind on them. Personally I mix spinach 50/50 with some other green, red leaf, romaine, whatever. Chop up some tomatoes and salt/pepper the tomatoes to taste. Then add a small amount of dressing, like around 2 teaspoons loosely drizzled. Makes a decent salad for around 50kcal and filling.
