Have you never had slow roasted carrots? Every roast I do I stick carrots under. I've legitimately had mouth watering delicious roasts that even as the cook I had to admit were virtually perfect yet people have complimented how good the carrots are. I dunno if it's cause people expect carrots to be boring but people always seem to be surprised when carrots actually good when it's so fucking easy for them to taste good.

I’m not sure what the historical reason is in the US (not sure how they sell them elsewhere) but they sell lots of stuff without the edible greens, and it’s very disappointing that my store recently stopped selling organic carrots and beets with greens attached (conventional never has that). Root vegetables last a long time but their greens go bad more quickly, so that could be a major reason in a mass farmed and distributed market. Because of this they may have found a good alternative use for these greens for their (the farmer’s) purposes. But I’ve also heard some grocery stores cut them off and will give them to you if you ask. This sounds like something you could have done 20+ years ago though and just doesn’t seem possible outside of IGA grocery stores. You can make carrot top pesto, chimichurri, use them as greens in soup, blanch and shock then sauté them. They’re a little bitter but not anywhere as bitter as mustard greens.
