He first ripped off Marco Pierre White and stole the idea (and name) of hells kitchen, then after the masses galloped that failed soccer player with black belt in karate who wanted to be a navy seal is a good cook he started to hide his inability to cook by screaming louder and louder at other people and businesses owners about how terrible their food is and how he the (anti)christ of food will be their saviour.
Look up his success rate and everything will be clear.
And once his real image started to show and his reputation got damaged in his homeland

I mean Ive been to yasuda and mitani, Mitani being the third best in tokyo and yeah for 300 bucks the course meal is actually filling and spaced out kinda long bet very memorable and although I wasnt too taken in on the not all the dishes were sushi it was still worth the money

Its a japanese apprenticeship mentality. You could learn everything you need to know after a year, but good luck trying to tell people that. Unless you go through a lengthy apprenticeship it will always be assumed that you aren't "good enough". Even if you send 15 years apprenticing you might never be regarded as highly as your mentor, depending on how famous your mentor is. They even remarked as much in the documentary, several times they said inspectors came in when only jiro's son was working and still rated the meals 3 stars. But since jiro is so highly regarded his son would have to innovate and surpass his father before being regarded as just his equal.
