The cookie was home-made in the same 9" cake round, but you're definitely right about it being a diabetic landmine. Each slice is 7" high of pure chocolate. All told, it took 10 sticks of butter, 4½ cups of cocoa powder, and an ungodly amount of sugar to make. Finishing a slice is damn near an achievement imho.

Yes. My cookie recipe is not really that special though. HALF of the following ended up being exactly the right amount of cookie dough for the base:

2¼ cups Flour
¾ cup Granulated sugar
¾ cup Brown sugar
½ cup Butter
1 egg
1 tsp Baking soda
Pinch of salt
12 oz. Chocolate chips
Sprinkle with sea salt

Bake at 275°F in a greased 9" cake pan lined with parchment paper (low temp so it doesn't burn as it cooks through)

if the chocolate was shaved chocolate instead of chips it'd be improved a lot
from my point of view you took an otherwise perfect cake and rolled it around in gravel, anyone with sensitive teeth or with older people any would probably struggle eating it.
overall just a better mouth feel though too, more luxurious.

I used to use a knife to shave chocolate but it's actually worth using a vegetable peeler, and you won't feel as bad for your poor knife
if you have a particularly sharp grater you can use that too, I've tried with a rotary before though and even sharp I wouldn't recommend it
