more than half your menu is not american diner food so i wouldn't theme your restaurant as an american diner but you're pretty accurate on americana/american regional. i've always wanted to open an american place in europe or asia and your menu seems perfect for a taste of the states. an american diner is more like grilled cheese, benedicts, breakfast burritos, burgers, chili. what you're doin is american regional which i think is a great concept outside the US but execution/technique is going to be difficult with the diversity of your menu. for example your texas brisket is going to require a 10-12 hour smoke where your brooklyn pizza will require making your own dough in a hobart. so lets say you have one guy handling the brisket working the smoker for an entire day another guy is going to be handling the pizza dough for 4 hours every morning. if its going to taste good and be authentic you're going to have to find an amazing prep cook or else you will be running labor well over par.

What the hell is a Colorado Smash Burger? What makes it unique to Colorado? Burgers are just... American. Get rid of Texas and KC selections and just do barbecue general to also include Memphis, St Louis and the many variations of the Carolina's. Make it a rotating special or something. the only issue with OP is execution. a pizza place spends most their labor on dough. a bbq place spends most their labor on brisket. a cajun spot spends most their labor on roux and stock. so he's got 3 extremely labor intensive items that are an afterthought, none of them will be done correctly without having to have a specific person on staff that spends their entire job working on those items.
