If you want a good sear, which comes from good thermal mass, cast iron is the way to go. Stainless steel may be slightly better, but not really enough to validate the price increase in my opinion. A cast iron will become nonstick if you season it properly, which just involves cooking in it, wiping it out, and adding another layer of oil after. Plus, you can abuse it (acid, scratching with metal, etc) without leaching shit into your food and it’s pretty easy to being the pan back up to speed after the fact. Also, it’s good for stovetop and oven as well as coals if you don’t mind the extra weight while backpacking

Heat the pan (not too much; just enough for a drop of water to glide around) then add a small pad of butter. Swish it around to coat and then immediately pour the eggs.
At this point the eggs won't stick at all unless you try to force them off while they're completely raw, so if making scramble just leave them be for the first 5-10 seconds then do whatever. This works for me even with stainless steel and absolutely no sticking

Yes. After you're done cooking, wipe it out and heat the pan up to medium low heat and spread some sea salt around and scrub with a regular sponge. They are great for searing meat. And you can use them as daily driver pans if need be, but IMO they are a bit of a hassle. I guess if you want to have only 1 pan, and not spend a bunch of money, a 12" Lodge is a solid choice. I prefer a 12" carbon steel, but they are 2-3x the cost of a Lodge, but are more versatile. You could go with a Chinese knockoff multi clad stainless, but those usually suck dick, and getting All Clad is the most expensive of all the options, so the fuck are most people going to really pick? If you fuck up hard and leave it to rust, at least cast iron is easily salvageable. Even though it's harder to do, you let an All Clad rust and it's pretty much fucked.

It is ridiculous and shows that you're not actually aware of how to use your pan properly. You can clean a seasoned cast iron pan with dishsoap as often as you want with no problems, as long as you oil it when it's dry (and don't fuck up the surface with steel wool). Modern soaps buffer out any remaining hydroxide ions from saponification, if they even use that process, which the majority of them don't since the chemical supply chain makes it easier to buy surfactants as-is.
The seasoning on a pan isn't oil, it's a cross-linked polymer made by reacting oil with air. There is absolutely nothing that soap can do to break that down. Any method you can use to clean a tupperware container is also safe to use on cast iron as long as you prevent any exposed iron from rusting, which is why you dry and oil the pan after cleaning.

If you want to season it just put a thin coat of lard on it once it's warm and stick it in the oven upside down at 400 for an hour. It costs a bit more, but after using two Lodges for years and finally getting a few raises and promotions I went out and got a Le Creuset enameled CI and a de Buyers carbon steel pan. Both of them perform FAR better than the Lodges ever did and besides the DB not being able to go into the oven due to the handle, are better in every way. I would highly recommend using those over bare CI if you can afford it. (which you should be able to, if you save as little as $50 a week from your paycheck it would take a month and a half to buy).

But I agree with most of the thread that CI isn't a hassle at all. If you're too lazy to spend an hour twice a year doing an oven seasoning then thats on you. Yes, you can use soap, yes you can soak it while you eat. They even make these chain main scrubbers that work like a fucking charm to clean them, and they're durable. My 12 inch Lodge was my dad's when he moved into his first apartment back in the 1960's. So anyone complaining about CI is an idiot.

If you're gunna get a stainless, get a high quality one like All-Clad d5 or d8, not some $40 Calphalon.

Enameled CI is easier cleanup and maintenance but you have to be more careful to not damage the enamel with tools or temperature, and honestly everything sticks like fuck to my enameled CI pan.
