It shreds the onion, but they're watery and the grater isn't /that/ sharp as its designed for cheese so the end result is more like you've crushed it, in the same way garlic is when you use a garlic press. If you're doing lets say, a curry and want more of a paste, then whatever its fine but if the recipe called for diced onions, just use a knife.

Yes. I grate onions on the large side and carrots on the small side for my cottage pies. As >>14567802 said, you'll really see way more water come out of the onion compared to a dice, but I usually just squeeze it out some and then drop it into the pan I'm cooking my mince in. Also works well for tomato-based sauces if you don't like them chunky.

I only do that for potato pancakes. It kinda works, but because the onion loses lots of water, it becomes very slippery and you can't hold the fucking onion right. Cut my fingers often doing it.

Yes and yes. I was making some hamburger steaks and I wanted the onion to finer than diced and I didn't have a food processor. The grated onion, juices and all, went into the meat mixture and it turned out pretty well. Not sure why else you would grate an onion though.
