I once has deep fried tofu covered in plum (or some other fruit) sauce as a starter at a ramen place. It could not be improved with meat.
Or course you could have deep fried chicken with some other sauce, but that's a decidedly a different dish.
Unfortunately this doesn't satisfy OPs criteria because animal fat is probably better, and it isn't a substitution dish which vegans hate because what they crave is meat combined with moral platitudes and only the one won't do.

I'm not actually vegan, just helpful.

One of the best things I got to eat was in north east india/Punjab, they make these toasted burgers with spiced chickpeas on a flat gas grill attached to a bicycle.
The salad was your typical red oinion/tomato/green chilli and boy did they use a 1:1:1 mix.
At 15 rupees I ordered 6 in a "shut up and take my money" moment and the indian crowd watched me eat them one after the other with a mix of amusement/horror/cow-stare.

Currently cooking sushi with pickled cucumber and carrot, side of miso/djoubanjiang tofu with braised daikon.
Went well, but I need a better way of pickling the cucumber
