Giving up pork and alcohol and agreeing to raise my kids muslim are the 3 small concessions I made in return for marrying the love of my life. Actual OP here sorry, ignore the Muslim and Christian posters because we aren't religious at all. Pigs can't be kept in the house because my wife has PTSD and the sight of pork can send her into a drunken spiral. When she was a little girl, she hopped over a farm's pig pen and was summarily attacked by Big Father (the name of the biggest pig there, apparently). She still has the scars on her right leg. This is also why she refuses to call me daddy in the bedroom, but I guess that's unimportant.

Please don't deride my wife. I just want to cook pork

oh yeah one more thing. i don't have a video but you can buy a super cheap pork shoulder, cover it in your dankest dry rub and but it on a low fire over a charcoal grill for like 8 hours, rotating it every hour, and then make a bbq sauce, toast some buns, maybe make a slaw if your're into that and boom you have pulled pork sammies.
another thing i do is get a slow cooker and put an entire tenderloin in there with citrus juice, onions, shallots, veggies, herbs. whatever the fuck you want and think goes together, fill it with stock and let it just cook all the way down like all day long - you can set this up in the morning, go to work and come back - and it'll be ready by dinner time. shred up the tenderloin and you can make sandwhiches, tacos, burritos, cottage pie... use your imagination

I'm careful not to ask questions or prod too much because the last time I sat her down to have a real discussion about this, she quietly shut me down and asked if we could just go to bed. >1 strip bacon, roughly chopped into small pieces
>2 cups leeks chopped, white and light green parts only
>2 cloves garlic diced
>chopped fresh rosemary
>chopped fresh thyme
>creme fresh or sour cream
>dijon mustard
>stock
>salt
>peppa
season chops with peppa, salt, rosemary, and thyme
let rest covered over night in fridge or on the counter for an hour
in deep pan or dutch oven, cook bacon
remove bacon when crisp saving the grease
cook chops in grease for ~3-4min a side until browned over med-high heat
remove chops when both sides browned and cover to keep warm
discard all but ~1tbsp grease
saute leeks until soft in grease, about 7 min
add garlic and saute for 1 min, dont brown the garlic you savage
add cooked bacon in
add ~1/3 stock to pot and scrap up brown bits on bottom
bring to boil then reduce to simmer
add chops in, cover, and simmer for ~3min a side until chops are done
remove chops and cook until remaining liquid evaporates
turn off heat and add in ~1-2 tbsp of dijon and ~1-2 tbsp of cream
DO NOT LET THIS BOIL NIGGA
salt and peppa to taste
top chops with leeks and serve
serve with some asparagus or some shit
