The classic omelette - hi heat, 2-3 well beaten eggs, stir a bit to stiffen up the egg without browning anything, season, shuffle, flip, fold on the dismount. Any filling to be pre-prepped because this bastid's done in 90 seconds.

Nefarious Egg Vomit (more of a tortilla most of the time) - 4-6 eggs, and whatever needs to go from the fridge. Fry meats, potatoes and veggies over high heat, drop to med-low, add eggs, stir so as to not burn, season, top with whatever sauces and cheese, broil until egg pizza.
