Oven, 250f for 8 hours, season however you want, take it out, shred, add more seasonings or bbq sauce if you want. Tender as hell great meat and takes zero effort

Yeah, cut it in half or thirds. Cut the part you’re using into 1” chunks, salt/pepper, and brown the shit out of them with saute function. Remove the pork, in goes 1/2 an onion diced (which will eventually dissolve) and the other half cut in half (which will stay together). Also a few carrots cut into 2” chunks. Once the onion starts browning, add the meat back in, dump in a can of tomatoes, a bit of hot sauce, some thyme, a few tbs brown sugar, syrup, bbq sauce, etc, any type of paprika you have, a bay leaf if you have it, add water to cover, then high pressure 30 min. Afterwards, depressurize, remove meat and large veg chunks and saute/season the sauce until it thickens up a bit, and add it all back to heat through.

Replying to an old thread but those pork roasts make great carnitas. Cut into chunks, salt and sear all sides first. If it's a 3-4lbs roast, throw in like 6 cloves worth of minced garlic, juice of 1 orange and 2 limes, tablespoon each of cumin and mexican oregano and a little chili powder to taste. I also add a couple spoonfuls of chipotles in adobo. Simmer that shit for about 3 hours and it turns into magic. Taste it about midway through in case you need to add more salt. It's a pretty easy and foolproof recipe and the leftovers are even better.
