In Wisconsin there's a place called Eaton's Fresh Pizza, they have a pizza called El Diablo with pepperjack cheese, banana peppers, and fried jalapenos. I would add bacon and sausage. Sausage, bell pepper, red onion, olive (used to be a black olive man, but I'm coming around on green for pizza, katamala are also good). I prefer my sauce raw, or only very slightly cooked, I like the fresh tomato taste. I'm still figuring out dough. I do a no kneed right now, but next time I'm going to try the Wolfgang Puck dough that Chef John had featured.
