masa is corn meal that has been soaked in pickling lime i believe. the pickling like makes vitamin b3 more bioavaible and helps aid the digestion of the protein and fiber in the grain

It's been a while since I've made it, but it's just a basic banana poundcake with, I think, half the plain flour replaced with that masa harina stuff and the egg and sugar reduced by half. If the ratio is fucked then oops, but I think this is right.

For example, 100g each sugar, egg, plain flour, and masa harina. 200g each banana and butter. 1tsp bicarb. 1tbsp of vinegar or lemon juice.
Whisk together flours and bicarb then set aside.
Cream sugar with butter.
Beat in banana, egg and vinegar/lemon juice.
Mix flour mixture into liquidy mixture.
Pour into prepared loaf pan.
Bake until set and skewer inserted in the middle comes out clean.
Cool and serve. Goes nicely with chocolate custard.
Can also stuff the mixture into banana leaves or corn husks and steam it, but that's more difficult cuz it's so messy.

Fuck it's been years since I had empanadas that I had forgotten about how good they were. One spot near an old job had a variety of them, including a dessert one filled with bananas and nutella. Absolutely delicious.

Masa harina is used to thicken chile and adds some flavor. Be careful where you buy it from, because I've bought a couple from shitty hippy places that have worms in them, it needs to be checked out. Apparently hippies are too freaked out and stoned to care what they eat.
