Much depends on how food is prepared. Vegan food can be more unhealthy if it's heavely processed for example.

Also, diet is super complicated and even "scientifi"c sources can be unreliable. You shouldn't trust singular findings on this field, but rather look where there are multiple sources saying the same thing.

Also, first time hearing chicken, eggs, fish or dairy are unhealthy. Citation needed.

All that being said, there usually are health benefits from limiting meat consumption, so if it's not done stupidly, like eating a lot of "impossible" style fast food, it should be good. Same with replacing pork with chicken. Likely gonna do you good.

This is what you need to be worrying about. Some studies I've looked at said animal products don't really cause problems for anyone who isn't already at risk of heart problems because of those factors. That's when minimizing animal fat in your diet can actually help prevent heart disease, but continuing to be obese or a heavy smoker or alcoholic is still going to cause you to end up with some kind of issue if you don't deal with that. It's probably just widely recommended to minimize animal fat because most people can't seem to get their weight under control, and saying "minimize animal fat if you're overweight" would probably just cause more problems.

There's a probable but unconfirmed link between high red meat consumption and stomach cancer however seasoning/curing and the cooking method have a much stronger association with stomach cancers (which is also proven conclusively) than the type of food itself.
