I've been making a cracking beef curry lately.

>Sear rump steak and dice
>Fry fresh onion, garlic, ginger and chilli in butter
>Add garam masala, cumin, ground coriander, cardamom, cinnamon and chilli powder, salt and pepper
>Fry until nice and fragrant
>Add beef
>Coat beef with spices
>Add tomato paste, cream and a little beef stock
>Simmer until beef is tender (around 30 minutes)

Japanese "curry" isn't that good honestly.
Pretty bland compared to stuff from actual curry making countries, like Thailand, Indonesia or India, all of which offer some completely unique techniques.

Japanese "curry" is just... regular stew basically.
Not bad, but nothing special or uniquely japanese about it, really.

Pic related is what I made today, beef Rendang.
Last week I made Indian Chana Masala, which was completely different. The week before that I made yellow Thai Curry. All of these have such unique flavours and that is just the tip of the ice berg.
The fact that you would name Jap stew as the "best curry" tells me that you haven't tried that many.

...not really. curry is based on preference. there are some people that pour cream into their jap curry. homemade jap curry is usually the roux blocks, and restaurants make their own roux using the curry powder, flour and butter template as copied by the jap navy
