It's the breads and chutneys, hands down.
A flaky milk based kulcha bread, with it's layers stuffed with paper thin onions or garlic cooked on the stone with it's smoky raised charred spots, and buttery goodness, served with an assortment of relishes, from a yummy coconut or tamarind chutney to oily and bitter hot mustard or briny mango aachars.

For a main course, Hyderabadi dum biryani (mutton is very nice but you can get it with other meats, fish or vegetarian) or palak/saag paneer.
After the biryani some Qubani ka meetha for dessert is delicious.

Southern-Indian breakfasts are awesome, idli (or vada) with coconut chutney, dosa, appam...
Leftover vada in yogurt (dahi vada) are also great.

For street food snacks pani puri are great.

I like Keralan fish curries. Malabar coastal food is my favorite in general due to all the coconuts/seafood. Deccan food is much drier/heavier/dairy based.

Chettinad is also really good once in a while. The Kalpasi lichen is an interesting flavoring agent, it's really unique.

I made biryani yesterday but it was not that great, kinda bland. Proper biryani is fucked up good.
Most curry dishes are good. The only times I have problems with Indian curries is if I got them from a place that was either really inauthentic, or really suspect in terms of hygiene. I've been in some nasty smelling places, there was this one when one of the chefs walked by and it literally smelled like he crawled out of an outhouse like in Slumdog Millionaire. That's no good.

Paneer is very easy to make at home. Exactly the same process as ricotta except at the end you squeeze all the moisture out of it. Wrap it in cheesecloth and leave a pot of water on it overnight or something. The process is just to heat milk to near boiling and add an acid to it, stirring it continually as the whey and curds separate. With ricotta you don't squeeze all the whey out, with paneer you do.

Alton Brown has a video where he makes a tandoori out of terracotta pots outside. But there's home methods for stuff like thus. You can cook naan on a skillet, then out it over your gas flame directly for some charred flavor. With a grill yoy can do the same thing I'm sure.

That's a small part of Indian cuisine anyway, the other parts are doable at home, though I've never made anything as good as the Aloo Matar at this one local restaurant. It's maddening, like they use an ingredient I don't have, even when I use stuff like hing, curry leaves, fenugreek etc. Online recipes all end up the same, they just lack some kind of depth.

Hi Indian friends! I love Indian food and I’m gonna get some more later today, but I’m tired of defaulting to the same options and want to try something new, but it’s hard to understand what’s what with all the names in Hindi.

Can a Gangesbro recommend me something new, something an Indian would get? I usually default either Chicken tikka masala, Butter chicken, and the various lamb curries like rogan josh, vindaloo, and hydrabadi. I always get them with a Samosa appetizer.

I’m open to new dishes, even veggie only dishes. Just make sure it’s tasty please.

Also no biryana, I don’t find them to be very impressive.
