Ok, make a roux, cook it until golden brown. Cook down some onions and mushrooms until tender, salt to taste with Cajun seasoning. Add the mushrooms and onions to the roux and some minced garlic. Add chicken/turkey broth to the mixture until you have a thick gravy. Lightly sear the breasts of the birds. Throw em into the gravy in a slow cooker, stew for while. Finish when tender, I don't remember exactly how long it takes.

These better not be some random pigeons you found. If not, pluck them, gut them, then you can pretty much just cook them like chicken or any poultry which is basically a infinite number of ways. Also, bleach that cutting board.

2 pigeons
4 tbsp. olive oil
2 tsp. ground cumin
2 cloves garlic, finely minced
freshly ground black pepper
salt

Check the birds to ensure that all the feathers have been plucked. If the birds are whole, cut them in half through the breast bone.

In a bowl, mix together the olive oil, cumin and garlic to make a marinade. Grind in some black pepper. Place the birds in the bowl and coat with the marinade on all sides. Allow to sit at room temperature for about an hour.

Preheat the oven to gas mark 7 (425 F, 210 C). Oil a baking dish, preferably ceramic or glass.

When the oven is very hot, place the birds in the baking dish, skin side up. Place in the oven to roast.

Check the birds after 15 minutes by inserting a fork. If the juice runs pink, the birds are medium rare, which is how they are served in France. If the juice is red, the birds are too rare and need to roast for another 5 minutes. If you prefer your birds well done, roast until the juice runs clear, checking every 5 minutes.

Salt the birds only when they are ready to come out of the oven.

Serve the birds with assorted seasonal veggies (for example, a medley of braised asparagus, peas and young onions, as shown in the photo). Wild rice would also be lovely. Serve straight out of the oven, accompanied by a sturdy red wine.

As for eating them, you are going to be risking several diseases doing that, so I can't really reccomend it in good counsciousness, but you probrably should at least make sure to cook those really well to decrease the disease risk.

I don't like wild dove/pigeon. Tastes too liver-y. Farmed is okay, though. While I've never plucked or cleaned my own, I've cooked dove/pigeon many times. Since it's so lean, one of the best ways to do it is potted with lard, duck fat or similarly solid-at-room-temperature cooking grease. Another good one is flash-fried Chinese-style and served with a dish of salt-and-pepper. Finally, oil-poached-then-roasted-for-crispiness is lovely. It makes the meat not seem so lean and guarantees a most bird. Due to their small size, oil-poaching is a good way to do them because you won't waste much oil in the process unlike oil-poaching something larger like, say, a cod or something.

They are actually kinda tasty OP. I've had pigeon more than once in the past. I would recommend you eat them in the form of a stew though. They are a little bit gamey but if you've ever made like a braised beef stew you could throw them in for extra protein or grind them up to use them in chili (you could do a 50-50 pigeon-beef combo. If you use some jalapeno or spicier peppers, I find the heat can not only compliment the flavor of the bird but lessen the gamey taste. You could also just grill them as you would a steak, bit of bbq sauce, serve it on a roll with some fries on the side. If you've never had pigeon before actually I would recommend just grilling them and making a sandwich. Hope you enjoy pal.
