What are some good meatloaf recipes that aren't just American ketchup-glazed family-of-five lazy mom meatloaf? Something that actual cultured people would eat? Or is it just a low class food that can't be done "right" at all?

There's a hipster ass place in town I took a date and she got the $20 meatloaf entree. I'd been there a couple times and was always interested in it but didn't like how much that meatloaf costed on principal. The new covid menu doesn't have it, but it was like 3 types of ground meat...brisket, short rib, and something else. Can't remember what the glaze was, but it was really fucking good. One pound ground beef, 1/4 cup milk, slice of bread no crust, 1/4 c chopped onions, 1/4 c chopped green pepper. Salt, pepper onion powder. 375 for 40 mins, put BBQ sauce ontop and back for another 10 mins

There was a cafeteria in my city that had a meatloaf with "Creole sauce" on the menu once a week. It had the consistency of apple sauce with the occasional chunk of tomato. I'm not sure I can describe the flavor, but it was mostly acidic with a hint of spice. For what it's worth, it's not the same as the other Creole sauce you may have had or read about.

The line was always out the door, but it moved fast since it was already cooked and under lamps. For months I went there every week and ordered it with collard greens, mashed potatoes and gravy, and a large yeast roll. There is little doubt I gained a lot of weight. The owners retired with zero notice and no interest in passing on the torch. It's unlikely I will ever get to eat it again. I wanted to try and reverse engineer the recipe.

What recipes are lost to time? It's devastating to think about.

I make brown-sugar-meatloaf, it's fucking delicious
You pack a 1/4 cup of brown sugar at the bottom of your greased loafpan, coat that with 1/4 cup ketchup and assemble the loaf as usual, I like a little ginger in mine. Set the loaf in the pan and top with another 1/4 cup brown sugar and ketchup.
The loaf absorbs all and tastes godly.

Joking aside, do you do anything to alter the texture of a meatloaf? I hate the fucking massive hamburgers that meatloaves end up being. Even people who add fillers end up with a crumbling mess. Despite working in a decent place we were repeatedly forced to come up with meatloaf menu items for a classy establishment, fucking midwest, and I've hated them since childhood. If anyone could make me stop hating these fucking things please help.

You just put psyllium husk and almond flour instead, as well as mozzarella.

Not bad, but try cooking those peppers and onions together, with just a tiny bit of oil, salt, pepper. Maybe a couple cloves garlic, crushed.

cook until just translucent and tender. Set aside to cool off, assemble the rest of the meatloaf mix, then add the onion mix. Slightly less moisture from veg, no chance of undercooked lumps.
