What are some easy ways to get more veggies in my diet? My breakfast is typically something simple like bacon & eggs, lunch usually just like a ham sandwich and dinner either another sandwich or pasta(or leftover pasta from the night before).

Assuming you're a beginner, stirfrys and mediterranean dishes often have lots of vegies in them and are easy to make. I'd look for recipes in those two categories.

This is a god idea. Also, try some simple vegetable soups. Most freeze well and are very easy to make, so an hour or two of cooking can create enough soup for many meals.

I would add some easy sides like sauerkraut and pickled beets for starters. Instead of pasta dishes, try some root or cabbage stews. You can use cheap cuts of beef, sausage, or bacon and add potatoes, carrots, leek, onion, cabbage, rutabega, turnip, whatever. Ratatouille is also easy and cheap, good for dinner or the leftovers for brunch with a poached egg on top.

Replace your breakfast with a smoothie. I get 6-7 servings of veg and fruit first thing and then can coast most of the rest of the day. Water, greens, carrot, tomato, avocado, apple, banana, berries, flax.

Peppers + Onions go well together and go great with breakfast. You can saute them before or on the side of your meats (if the pan is big enough) or after in the grease if you don't care about fat. Mushrooms can be cooked to death so they're safe to throw in early. Thick, crunchy vegetables need more time. Steaming is simple but plain, roasting is best but more time consuming only because you got to preheat and wait. Just make a giant batch and eat it over the course of three days.

But also, be prepared for solid shits. Don't be alarmed, it's natural. We're just not used to having enough fiber on the reg. It does make wiping a breeze.
