A lot of mass market wines are basically the same thing with different labels for people who buy their wine based on what they heard is good (pinot noir is always a best seller)

In the new world (and sometimes old) the "better" wine makers will publish tech data like did they destem, did they do whole cluster, did they fine or filter (and what did they use), how long on the skins, etc

Old world wine has tended to handle this stuff by geographic indications although some regions are more flexible than others in which case you have to fall back on the tech sheets

CA has already gone down a path away from the boomer-tier juice you're talking about. The hipster wine movement has already begun and peaked and we're fortunately being left with some decent wine making, and balanced approaches to wine that don't involve "cult" styled Napa Cabs that are hugely extracted and overoaked for points and scores. The spiral actually was already ended by 2017-18 but the wine industry trends take a few years to hit the "mainstream" consumers' palates and tables. We're gonna take a detour and slowdown from this improvement with COVID due to people drinking tons of cheap shitty wine now. It'll come back eventually.

It's very competitive to be a buyer in certain markets. You're not going to just get the job without working retail/restaurant for a few years at least first. That's what I did, I was just basically a retail associate for a while, then managed the shop, then was head buyer. Learn as much as you can, and find a shop to work at where you can taste regularly. You *have* to have a palate and know what the market is like. I imagine it varies greatly depending on which city/state you're in. WSET is good for general knowledge but the most successful buyers don't need to be super technical for their consumers. It's marketing/storytelling/sales and less intellectual discussion, because you'll find that most consumers don't know wine very well at all, even your high end customers. I would start looking for boutique wine shops, as anything in big chain stores is super competitive if you're not already in the industry especially.

>>14399709
Spanish wine can be great but honestly that's way too generalized of a statement to take seriously. It's like saying "oh man I had a wagyu A5 kobe steak once and it was great, beef is all awesome", when we all know there's shoeleather shitty steaks out there. There is some wonderful incredible Spanish wine, some of it for great value prices, but there's also goopy, extracted, monstrously disgusting Frankenwines from Spain as well. If they were study abroad kids, they probably loved how cheap, accessible, fresh, and relatively unmanipulated the wines they were drinking were, but I have no idea where they were. In general though, the bottom end of wine in Europe (France, Spain, Italy) is much much better than the bottom end of wine here in the USA, for a number of reasons, but one reason is subsidies exist there that don't here, so people can make cheaper better wine.

Good to hear man! I absolutely fucking love Jura wine too (though not all of it), but most of what makes it here is decent at worst. I was in Poligny but Arbois was a lovely town too. Poligny is located in the Cotes du Jura AOC, which I think is kind of silly that they didn't differentiate more AOC's and Arbois happened to get one due to local politics at the time.

The Jura could easily have many more distinct village-level AOC's but one thing is they have a bit of a rivalry with the much more prestigious Burgundy (its just an hour to the west) and they still have a "fuck you, we're not Burgundy" sort of relationship with Burgundy, and didn't want to be like the Bourguignons.

Arbois makes the best fuller bodied reds in the region most likely. The village of Montigny-les-Arsures possibly boasting the best Trousseau in the region, but totally depends. I worked for a Vin Jaune producer (not everyone makes Vin Jaune), but we also make red (Poulsard, Trousseau, Pinot Noir), dry oxidative white (Savagnin and Chardonnay) Cremant (white and rosé), and Macvin (white and rouge). It was fucking awesome and I miss it there. The Jurassien people are OG as fuck and some of the most laid back and real deal in all of France. A bit yokel, a bit of that Germanic/Swiss weird/tackyness that you only find in Eastern France, but they're honest real people. If you ever go there, you must try Poulet au Vin Jaune, a local specialty with chicken in a cream sauce made with vin jaune and fresh wild morels. It's my favorite French dish.

Thanks for the advice man. To be honest my passions are more in whisky but I wanna learn about production for both whisky, beer, wine, brandy and other spirits to give myself more rounded knowledge. I'm in Canada in a provincial controlled market so I'm pretty much fucked unless I know somebody as the system to even get to become a product specialist is seniority based and most need at least 8 years working at a store before even being considered regardless of if they even give a shit or not. I wish I could move to the U.K. or Germany and work there desu but I need more savings first.

>On the other hand, while the process of label approval is enforced to the millimetre, the quality control for the wine in the bottle is much less strict. While a blind taster must approve the wine for it to receive AOC classification, this tasting often occurs before the product is even bottled, and by a local expert who may well have ties to the local vintners. Even if the taster is objective, the wine sample may not be representative of the actual product, and there is almost no way to verify that the finished bottled product is the same as the original AOC sample

For what I've learned acidity is more related to how watery your mouth gets from the liquid. A good way to tell if a wine is acidic is to droop your mouth after tasting a wine to see if you start to drip saliva or not or how much is built up. If it's a lot then it's a pretty acidic wine.

Absolutely happy to help out man. If you'd like, shoot me an email and I'll reach out and can continue any discussion if you had more questions. If not, I wish you the best of luck. After wine, whiskey is my second love tied with beer. I'm a huge scotch fan and would have loved to get into that side of the business as well, but that seems even more tight and a smaller world.

The LCBO is one of the biggest wine buyers on the planet, so I'm not surprised it's an old boys club there. In BC there's obviously a small thriving wine community that maybe you could get plugged into on the production side? I know they're making some awesome whisky in Nova Scotia now as well. I always dreamed of being a buyer in Hong Kong (but that's done now...) or London, but now I don't really have much interest in retail since you're 95% of the time selling to the lowest common denominator and/or your clients are just rich dicks who have more money than sense and they'd rather jerk off over how much Coche-Dury or Mugnier or Pierre Yves Colin Morey or whatever the fuck trendy Burgundy they like at the moment.

>>14400423
Original buyer here, but seconding >>14400491 in that Dr Frank is good stuff, but I also really like the Herman J Weimer wines too. I have always enjoyed wines from Ravines (their Cab Franc + Riesling), and I liked the wines from Terrassen as well. Though to be honest I've been out of the market as a buyer for a few years so I'm sure there's some newer stuff that made it to the West Coast here that is great too. I don't care for a few of the super hipster natural wines from there I've had (and Vermont, too), but that doesn't mean I don't like all/any natural wines. I haven't liked the Long Island stuff I've had so far that much either, but I'm sure there will be improvements!

I never went Court of Master Somm or WSET myself honestly, and I regret not getting Certified Somm at least when it was super easy (I don't care so much about service portion) just to tell normies and non-wine people that I'm "Certified". It's so fucking stupid but it actually gets people paying jobs doing cool things sometimes. That said I'm all for wine education if you're passionate about it. I have found that if you know your shit, people can tell, and no one cares what letters you have after your name whether its CSW, FWS, CWS, WSET 2-3-4, Advanced Somm or whatever. If you hit Master of Wine or Master Somm people take you very seriously but most of those guys end up just starting businesses that they could have done without the studying. However the recognition helps significantly in getting investors, and marketing. I traveled with Ian Cauble (the blonde guy from the Somm movie who has Somm Select) in France for a few days tasting wines and he's a nice dude, but anyone could start an online wine club if you had good marketing/investors.

>>14401138
Check out Austrian Gruner Veltliner that comes in 1L bottles. Not the expensive stuff, but the 14-17 dollar stuff. It'll be crisp, tart, a little sour, refreshing, and super good. Also look for Sancerre (Sauvignon Blanc from France's Loire), and Muscadet (a dry white, often Melon de Bourgogne, or Folle Blanche for oysters from western France). Spend 13-20 bucks.

>In BC there's obviously a small thriving wine community that maybe you could get plugged into on the production side?
I was thinking of that but I'm sure I wanna move out to BC anytime soon. Might look into working in Niagara or Prince Edward County at some point or do the distilling program at Niagara College but im not sure how it compares to Herriot Watt in terms of skill sets it teaches.
I help run a whisky club so I deal with Canadian distillers a lot. Glenora/Glen Breton is the big one in Nova Scotia but their spirit cuts are really wide which gives it an overlying plastic/play-doh note. However, their peated stuff is ridiculously good supposedly. B.C. is actually probably the biggest craft player right now with Shelter Point at the top. They make amazing stuff.
Don't really have a throwaway email so I'll try and reply with a protonmail sometime tomorrow if anything. Appreciate the kind words mate.

No problem! Also the suggestions of the other anon, Gavi (the grape is Cortese) and Fiano are both great Italian white wine options too. Other grapes/wine regions to try or look out for are: Vermentino, Frascati, Lugana, Saumur (Chenin Blanc), and if you like a little spritz in your wine try Txakoli (pronounced chalk-oh-lee) from Basque country.

Side note: Maybe the most important thing anyone reading this should take away is that in the "new world" (USA, South America, South Africa, Australia, etc) wines are generally called by their variety/grape type, so, Cabernet Sauvignon, Chardonnay, Pinot Noir, whatever, and in the "Old world" aka continental Europe (especially France, Italy, Spain but Germany and Austria to an extent as well), wines are called by their region and the grape is implied. A wine with "Bordeaux" on the label will have certain grapes, a wine with "Chianti" on the label will have certain grapes, but those are place names, not the names of the grapes themselves. It's a bit confusing, but it is kind of cool once you understand the geography a bit better and then realize that, for example, any white wine from Sancerre in France's Loire Valley is going to be Sauvignon Blanc.

Wine wise, the Tawse winery in Niagara is fantastic and I would highly recommend you check them out if you're nearby. Their Burgundies are incredible as well but I think they make my favorite wines from Niagara. I hear you on not wanting to move all the way to BC for a maybe job, but internationally Canada is basically only known for BC (Okanagan, Vancouver Island) and Niagara + ice wine at the moment.

I've heard about Glen Breton actually and have had one peated expression that was very tasty. I didn't know about the wide cuts, but if I recall they're a new project so I imagine they're taking some wider cuts to increase profits... I've never had any BC whiskey but if Shelter Point is ever on a list I'll seek it out. Sadly, there's still some ridiculously protectionist tariff laws for both Canada -> US, and US -> Canada for most booze so it's difficult. Maybe I should become a rumrunner and smuggle good shit across the border for some excitement and money.

>> No.14401786

Shelter Point is only starting to hit US markets now in the Northwest but its definitely worth trying, especially the cask strength blend or any of their cask finish expressions. Recently they put out a 5 year malted wheat they grew on their farm in Campbell River that I hear is really cool. They'll be a hidden gem for the next little while so if you like weird whisky and single malt definitely look close into them now before they get popular.
Also Black Fox in Saskatchewan is cool if you like unusual grain spirits like 100% oat and triticale (a cross of rye and wheat) and might be a worthwhile project one day.
I've had a few from Tawse and they're quite good! I personally have really enjoyed Hidden Bench's pinot noir as its quite farmy and has a decent body. I believe its also organic now similar to Tawse.
I really hope the CUMSA leads to liberalized alcohol trade (and also because I really wanna buy more mezcal and Westland cask picks) but given government greed and nanny state shit i doubt it.

I live in Hungary, no French connection, they were just the only community willing to discuss wine.

Vintage noble sweet is great! TBA, Sauternes are for when you really want to impress your guests. TBA needs no pairing, Sauternes fares well with foie gras. Spätlese, Auslese, Beerenauslese are for various oriental foods with strong flavors and citrus based desserts. Tokaji from the '80 is horrendous, use it to decorate your bookshelves. Rutherglen Muscat is the one you can use best with desserts. Nut based, caramellised (but not overly sweet) desserts are a good pairing. I don't know Canadian or Italian wines enough to recommend those, ask an expert if you have them. Another thing: these wines often have high acidity, even after 40 years. If you pair them with overly sweet desserts, they may come off as sour and unpleasant.

Male wine drinker here. It’s funny buying a good Bordeaux. I usually get asked who I’m buying it for, Wife? Mother? Sister? Surely it can’t be for yourself. Then when I tell it’s for me, I get a shocked look. They recover and decide to ‘play along’ with me. Then they start telling me lots of things I know I about wine.
It’s at this point, if I can be bothered, I go through their shelves and tell them all the ones I’ve tasted and why I like them or not. Which regions I prefer, big up Marlborough, and why I’m not a fan of Californian and 100% prefer Spanish.
Now is when I think they feel bad. Because they always offer me loads of samples. I can usually free taste like 4/5 different ones min on every visit.
Having said that met a really nice man last time through the airport who was giving out Schlumberger samples. We had a great chat. He was awesome.
Now girls at bars when you order a large white find you immediately intriguing. They watch you take a sip. I think they are waiting to see if you make a face. When you look pleased then they have their in to strike up a conversation.
I don’t know a lot of other male wine drinkers but I wish I did. I can only go on so many tasting sessions with girls.

What’s a good cheap, entry level wine to pair with hard cheeses? I like cheese but never had a taste for wine and want to give it another shot. Honestly even just knowing what color wine to pair with it would be helpful.

Why niggas shitting on white wine? It's way mor versatile to pair with food (assuming that /ck/ eats snacks and mac & cheese way more than red spicy meat).
Drinking San Pedro de Yacochuya Torrontes, 2019 absolute great year for whites in argentina/chile.

I'm always confused about people who genuinely post things like this. Why not go with who's best? Or local? Or ethical? Why would your number one criteria be their ancestry

I don't own a winery so I'll be fine. Some broad I know asked about tarot bullshit and at the end added "bipoc recommendations only please" in her post and I just didn't get the point

entry level cliches give people a sense of being hip to the game. like a burgundy is a chardonnay, right? but whether by nature or nurture you do get a lot of ladies drinking pinot grigio / sauv blanc type shit. of course the amount of amazing wine in california can be daunting.

Dry (read, not sweet, super fruity, or super high alcohol, so not necessarily Zinfandel/Petite Sirah) red wines do great in general. That's hugely general to say but fairly true. Try a Sangiovese (Chianti) or something medium bodied from Italy.

Hard and fast rules for wine pairing don't really exist, they're honestly more guidelines. True Champagne can be fucking amazing with steak, for example.
