I like to use thick slices of cheese and cook it on medium heat with butter. I like it when the bread is browned and crispy but the cheese has only warmed up and not fully melted. Then I'll dip it in mustard. Sometimes I put pickles on it too.

Indeed. Honey and cheese has a marriage of decliousness. In fact, honies from certain areas are pretty savory even. Avocado honey tastes floral, herbal and buttery at the same time. Olive tree orchards are sources of delicious honey. Rich green flavors that morph into something else buttery too.
