Distributes heat quickly and evenly, light weight, very few limitations on what you can do with it. You won't have any issues with sticking if you use oil properly. What's not to like?

real copper pans shouldn't be used a lot because it can give you copper poisoning. they're mostly used for candy making. the copper non-stick pans are just copper colored and no different from any other non-stick bullshit. copper is a valuable metal and any real copper pans you find won't be cheap even if they've been completely ruined

Cast iron for camping because the conditions lead to "accidentally" seasoning your cast iron. There is still a huge portion of the population that doesn't quite understand it. Since people don't generally bring dish soap when camping and since people don't clean their camping supplies at home, it leads to these people thinking camp food tastes better on cast iron just because they've seasoned it properly without realizing.

Abetter pan wont make much difference. Stainless steel emits much less infrared radiation than cast iron when hot, that is the reason why stuff browns better in cast iron than in stainless steel.

love my all clad. worth every penny. i can make mashed potatoes direct in the pot. i can use it on my induction plate (too poor for a induction stove now). i can use a hard metal utensil to chop, flip, and pick at things. some asshole can put it in the dishwasher and it will be okay. i can broil in the saute pan. i can do fancy stuff with fish and chicken. i really don't regret it. lasts forever and I've noticed the price only goes up-and-up every year.
