Look at their history. Originally native islanders, then you have colonies of South and South East Asians, then you have Arab and Chinese traders, then you have Spanish colonization, and then you have American colonization.

Fresh vegetables and herbs were a luxury so you don't see much use of them in most recipes and at most it's dried. Cheap root vegetables like taro and ube, onions, garlic, things that can be stored a long time without refrigeration are the vegetables used if they are used.

Pretty good point.

I have had two Filipino roommates over the course of my life. Go to the parties and/or dinners if you get invited. They have good food, but they also have a running joke of making some random mashup like hotdogs in spaghetti and calling it Filipino food.
