American cheese is great on burgers, kinda shit on everything else. And even then, it's is great on a very specific type of burger: thin patty, conservative use of toppings: mustard, raw onions and that's basically it. That way you can really feel the creaminess and the taste of the cheese doesn't get lost. It you have tomatoes, lettuce, ketchup, pickles, etc. you're losing the cheese and you're better off with sharp cheddar.

The real cheeseburger redpill is blue cheese, but you guys aren't ready for it

Sharp cheddar in the USA is equivalent to mild or medium cheddar in UK. A decent cheddar will not slice. It crumbles. This is the case with UK extra mature and vintage cheddars.
