I had a shishkabob, filet mignon, mushrooms, peppers, onions. Slabs of grilled eggplant, and a cold taboulleh salad (feta, olives, tomato, cucumber, basil, lemon, cracked wheat). Pineapple upside down cake.

I just rolled with it by my mood. Typically I do a memorial day/veterans day/4th of July good ol American special, with watrmelon. Not usually not burgers/hot dogs which I can have any time, but pork. A smoked whole loin roast, or ribs, and yah, cole slaw, potato salad, roast corn, pickles, baked beans, and limeade. Apple pie with vanilla ice cream. It varies, something I feel like adding to it. I made a big batch of green boiled peanuts, for instance. I might make some southern family recipe for nostalia sakes. Could make a banana-pudding with nilla wafer and whipped cream like old fashioned banana pudding, but my grandmother had a layer of crushed pineapple.
I might do some fried green tomatoes, or fried okra, even smoked wings, dunno my mood, too.

Always fixed up a crock pot for the break room full of sliced roast turkey and sandwich fixings on black friday.

I eat whatever I feel like eating. Going for contrarian foods sounds pretty hipster honestly. Getting turkey, gravy, stuffing, etc is great on Thanksgiving, and ham on Christmas is great because I'm not usually eating that any other time of the year.

I wouldn't screw up my Thanksgiving menu too far from the traditional favorites. I like stuffing just way too much, not to mention my cranberry mold or pecan pie.

But, I don't mind doing a nice dinner that is more like a lasagna casserole easy to make with a salad. Easy for zipping out to midnight mass or being split among parties and other obligations. One of the to holidays will be a the right menu though. A roast (will be ham, roast beef), probably about 6 sides/salads plus some crudite, relish tray (marinated stuff I made ahead), and choice of desserts, full cookie jar and some candy like fudge and pies. Dinner will be late night, and a few seconds after later.

St. Patrick's Day is traditional. Is there any other real holidays?

For "4th of July" I actually had a mixed grill Greek grilling party. It was just more of a craving and effort than ribs, burgers, hot dogs and apple pie since I had it recently. Memorial Day, Veteran's Day, and these are just All-American cookout days, but I tend just to grill what I feel like having.
