I've been wrestling with this. The prices I've seen so far have been eye-opening, to say the least. I would love to spend more on quality stuff but right now I would feel comfortable spending up to $200 for various pieces, or $50-$60 on a single good item.

Your going to end up buying nice stuff that you never use because you want to keep it 'nice'. Just buy some shit from the thrift store. When you find yourself cursing at one of your pots or pans then you will know it is time to drop 50 or 60 on one of those specific items.
