I've had a Joule since the third batch of pre-orders and it works fantastic. ATK has it as their recommended one, too.

Duh, it doesn't have buttons so you can't adjust it tactilely like you might want to, but the app-only interface is essentially a non-factor once you've used it more than 4 times. It looks great, it does exactly what it's supposed to, very well, and it's insanely easy to clean and dry once you're done.

I've cooked whole let of lamb, bone-in rib roast, and even venison in it, and it's handled everything pretty well. A couple times it was my fault for not getting the water bath set up right and letting the water level get too low in longer cooks (24+ hours) but that's a mistake you make once or twice and then no more.

I bought the cheapest anova one, it's great. Albeit it's quite time consuming so I wouldn't really use it unless I'm having people over or it's the weekend I don't want to go out for steak.

The worst part is finding a suitable vessel, all my pots have flaired lips on the top that makes clipping it on a hassle.

If you want to impress people super easy it's great.
Just get an impressive cut of meat, sousvide it, sear it and it comes out perfect everytime. 650g Tommahawk steaks are a piece of piss, whole picanha roasts.

Pros and cons to everything.
It's smaller than a turkey fryer, so it's easy to store, but you can't deep fry a turkey in it.

I can definitely see an advantage to getting a sous vide rig if you want pasteurized eggs.

You can literally buy silicone bags or ziplock bags that can be washed and reused.

I buy two rolls for a total of 6 meters (236 inches or whatever the fuck fantasy unit you use) and I pay 11€.

Two of them can last me two months depending on how much I cook and store, also buying the rolls it’s better because you can cut custom size bags.

The Joule is probably the worst one out there because you need to use that shitty battery draining app to even turn it on and it constantly needs firmware updates to sell your metadata. If you're going to get one, I'd recommend the Anova. Be sure to get a good sized container with a cover for it and some magnets or clips to hold your food down.

If you treat it as a better slow cooker, then it's great to use. I don't get the people using it for a single steak that you could prepare in 5 minutes in a pan.

Don't most people have ziplock bags anyway for sandwiches and leftovers? I just use the same bags I use for marinades. The one annoying part is needing to double bag long cooks. I've had one for years but I still can't justify getting the vacuum sealers though.

That's not a terrible idea but it would still cook much less evenly and the minimum holding temperature is still probably too high for some dishes.

The bigger issue for me would be moisture loss from where ever you need to run the probe from. Creating a probe point for that could get very involved and would probably mean making your own lid.

I have a hand mixer and blender that i inherited from my mom that were made in the 1970s. They look ugly as sin(yellowed beige plastic) but they work fine. The sexiest and sleekist and most expensive looking IoT item can be perfectly cared for and it'll still be complete and utter garbage in 10 years. Its so fucking wasteful.
I intentionally avoid shit that even includes bluetooth or internet access, even if there are still manual controls, since some errant update might brick them. Sonos was going to brick all their 5+ year old speakers a few months ago(and probably still will in a year or 2, once people stop paying attention again)

nah, one of the biggest problem with reverse sear is that you have to rest it on a rack to cook and when you do that, it leaves indentations on the meat. this makes it real hard to get a good sear on that side. i switched over to sous vide because of this.
