This is truth in labeling. Yes.
It has a lot of filling, and each one is enriched, stabilized, plus thickeners and each part needing a cooking oil and/or dehydrated to remove moisture content. You'd sue them when molten pepper juice and superheated steam squirted out. Oh well. It's good for a while/long shelf life life, but you could batch cook it too, from scratch it! Wrap well, freeze it, and have it last a couple of weeks only, to be safe. Microwave 50% power or bake tightly in foil, finishing at a bit of browning. Innovation!

Aside from those it all seems fine. A lot of thickeners, binders, fillers, and preservatives though. I guess that's necessary if you want a ready to eat filling that doesn't separate. I agree, I'm not doing anything other than just cooking scrambled eggs the normal way. But it involves moving the eggs around so much that they never have a chance to stick in any significant way and they don't lose enough of their water content to burn onto the surface or anything. A fried egg or omelette will absolutely stick, though, and that's why I always cook those with butter.

But no, sodium metabisulfite is a reducing agent, aka a dough relaxer. It makes it easier to stretch out. So it makes weakens the gluten structure and makes it easier to stretch out to a thin tortilla.
