The main difference is the surrounding, the next difference is the filling, then the preparation, then the presentation. The dough used in most European dishes is different to that of Asian cuisine. This can change depending on regions and availability. Filling is usually dependent on region; meat or vegetable and then varietals thereof. The prep is usually 3 ways: boiled, steamed or fried. The ones my polish grandma made were unforgettable. As with most food, it's in the quality of ingredients. Also, her potato pierogi were quite peppery. There was enough pepper that they were actually a little bit spicy. You'd feel it more in your nose than in your mouth, but it was still a nice sensation. And of course "potato" pierogi should contain equal parts potato and farmer's cheese. The crumbly kind of fresh cheese.

It's pretty arbitrary because there are so many variations, Knishes, German breaded dumplings, Kyrgis mantys could all be included- or go even farther and include baked pastries/pies and stuffed flatbreads.
I can't remember having ever eaten any African or Australasian dumplings that i liked
