Crispy as hell but thick enough that the center is creamy. There was a nearby family owned burger joint that used to have perfect fries 100% of the time but the owner retired and the kids didn't want to take over the business so now they're gone. Not everything was better back in the day, especially cars. But one thing that definitely was, is McDonald's lard-fried french fries.
Also, the Whopper was better. Like super better, by a lot.
And Pan Pizza from Pizza Hut.

If I’m sober, then I’ll cut up a large russet, soak the segments in ice water for a half hour or so, cook in duck fat at a low temperature between 220-300*F for about fifteen minutes, pull them out to cool on a rack while cranking the heat back up, then finishing at between 375 and 400F until they’re nice and brown. I then lay them back on the cooling rack and pat with towels before tossing them with parsley, oregano, rosemary, parmesan, garlic powder, sea salt, and some paprika. Tots are strong contender for number one.
Keep in mind that 90% of your tots will be cooked incorrectly, and you cant judge by bad examples. Very few people/places can do it right. But when they do, they blow away any potato shape. The potato is minced, seasoned, and reformed into the perfect shape and texture, with a web of internal air pockets, allowing the browning to be not just on the surface, but through the entire fucking thing. Not a chance of other fries competing with that.
