beef jerky always turns out great with a proper marinade. Banana chips are a cheap and easy go to. If you put a drop of honey on your banana chips they turn out like candy.

I tried out garlic, onion, and mushrooms to grind and make powders. The onion powder turned out a little tacky due to the natural sugars in them, the garlic did very well. They for sure tasted better than store bought powders but the time effort and money is kinda not worth it in the end.
The mushroom powder was very good to help with flavoring things like sauces and stocks.

It looked thirsty so I gave him some water and then it followed me around, my family and I returned it to it's owner, it was the right thing to do. You can dehydrate most any fruit with great results. They turn out sweet and if you do it at a higher temp for longer they can become chips. A very nice crunchy snack.
The same can be done with cheese. The more famous chip is provolone, but you can try it with anything. I like to slice up mozzarella and use that. Any cheese that isn't too watery will work.
Herbs and peppers, things like that, work wonderfully, you can jar them up and they'll hold on forever.
I don't make any powders like the other anon, I feel like it's too much time and effort, especially with mushrooms which rehydrate wonderfully in soups and stews, just thin slices will do. But he is right that it adds more body.
Jerky is great too, you can make any marinade you want, from sweet to savoury and spicy, but the nicer thing is to make it out of any meat you want. Chicken and turkey jerky (heh) are wonderful and incredibly lean and very flavorful.
If you ever get too much fruit on sale you can puree it in a blender with some sugar and dehydrate to make fruit roll-ups, you can dry them on parchment paper and cut them with the paper using scissors and you can roll them up and give away, people quite like them.

Some meats require cooking, before dehydrating.

Dehydrating meat usually requires sustained temperatures of about 160f. Over several hours, that temperature is high enough to kill harmful bacteria that might exist on beef or certain other, red meats. It cannot guarantee safety when dehydrating pork or chicken, however, which generally require cooking to specific temperatures, before or after dehydration (I can't recall, off hand), in order to kill the harmful bacteria that can exist on these meats.
