I think I am going to try to make a spanish tortilla tomorrow but I only have russet potatoes .
Will that be too starchy?
What do they use in spain?

Any potato should be fine. My mum always soaks them in cold water after cutting them though. So yeah, probably do that before frying them.

I'm Spanish and I have seen this done before, even my mum has done it a couple of times but this is only for either really lazy people or for when you want a tortilla quick.
But it just doesn't compare with the traditional tortilla de patatas. Some people would even be dissapointed to see that my mum used crisps.
