If a bakery uses a slicer, then most likely, their dough is not good, they don't leaven it for long enough, they hardly knead the bread and at the end of it, the product is just as good as store bought. That's at least from my experience

They're referring to the invention of bread with preservatives that can be mass-produced and kept shelf stable for far longer than any traditionally-made bread ever could, thereby severely reducing the cost of bread while simultaneously increasing its accessibility and convenience. There's a restaurant near me, that make great rye bread and I want a loaf I have order about a day ahead. Sure I want it sliced. The thing is that if I don't put in a freezer pretty quick it'll get moldy, so yeah it's best to have it sliced, I put the slices between wax paper then right into a freezer in big ass freezer ziplock bags. Sort of remindes me to order another loaf but they're closed on Monday.
