I might have almost believed you did have the ability if you wrote "I can notice a difference in taste." But to say it's something blatantly different "like night and day" you're clearly just being suggestible and placebo-ing yourself.
Despite this popular belief all evidence points to it not being perceptible as different through taste alone (i.e. blind taste test done PROPERLY where you personally have no idea what's going on and an independent researcher will find out the results later).
Though certainly if you learn about HFCS in soda you can prime yourself to start feeling as though there is a difference because the power of suggestion can easily overtake actual sensory information, especially in cases where there isn't much or any of a difference to detect (a lot like how you start to see and hear things when places in sensory deprivation; less sensory saliency = more feedback from your brain).

Calories determine weight loss or weight gain. Exercise too, but for most people it'll be calories that are the determining factor for their weight situation. This link here even mentions that point about food energy vs. phsycial activity changes explicitly:
