Something doesn't need to have fat to be fattening. Any calorie dense food will be fattening. But the fat in the skin does add a considerable amount of calories to the wing.
As far as sauce goes, buffalo sauce is made using a lot of butter, which is also calorie dense. Sweet sauces will be adding sugar. Any dipping sauce will probably add calories as well.
Just regular hot sauce though won't add many calories.
