Leave the bone in. recommend you add caramelized onions and mustard...obviously salt & pepper. That's how most Chicago places do it. Serve on a bun of some sort.

Bone-in pork chop sandwiches are a thing in Chicago.
Not unlike pounded breaded pork tenderloin sandwiches are a thing in Indiana, Iowa, and southern Illinois.

That thin giant slab of schnitzel is Indiana pork sandwich style. Weirdly enough, there are bone-in meats served in places all around the US (midwest mostly), places other than the third world style Caribbean goat curry roti or chicken cleavered into small bone-in pieces in a Chinest pot of chicken, and you're just supposed to gingerly eat around and discard bones as you find them. Be careful!
