Filled with 1 diced onion, 2 grated carrots,minced meat and spices. Once I stuffed the peppers with the filling, I cut a tomato and used it like a lid for the stuffing

You can chop it in tiny cubes and mix with meat or add slices/bigger pieces to the sauce so it infuses the flavor in. I usually use scraps like bacon skin or pršut bone/cartilage, like Italians put in their soups and stews

before adding the peppers into a big pan, you have to make something we call "zaprška". it a little oil with a tiny bit of flour (half a spoon full), stirr it sonstantly untill its desolved, then you add the peppers, stuff as many as you can. then add a little bit of water. untill the peppers are halfway drowned in it. then you can set a timer of 45min. wait till the water starts boiling. when it does, add the cooked tomato sauce. by now your peppers top should be just above the surface. set the flame to about medium and keep the lid of the pot on. and let it simmer like that.
(optional) open the lid every 8-10 min to let some steam out untill they are done

if your adding rice, dont overcook. the meat will be super tender, so you can add a bit of crunch in the rice.

Just google punjene paprike and google translate the recipe. For extra flavor use bacon in the sauce or any other smoked meat. It's not in 90% of the recipes but it's a regional variation and tastes much better

Here's mine:
Sauteing onion, garlic, celeriac and finely chopped bacon. Seasoned with salt, pepper, tbsp of smoked paprika, parsley. When onion softens add rice and mix.

Put peppers in a pot or pressure cooker, make sauce from roux, a can of tomato puree/diced tomatoes and 5 cups of water (or more, until it covers everything). Optional: Add some bacon skin/scraps to the sauce for the flavor

Did it once, it tastes sweeter and lacks the acidity from white bell peppers. Red are better cut up in half, filled with spiced meat mixture and baked in oven instead of braising in sauce.
