It's expensive everywhere. If it's nice quality, it's roughly the same price as 3x the amount of meat.

I saw chuck roasts yesterday at Aldi for roughly $22 each. I think beef prices are up in the USA at the moment. There's scarcity, I feel on many items, like reduced amounts of chicken for sale, though I haven't seen a change in those prices much. So, my info is old. I haven't been in months but when I used to stop at Publix or Winn-Dixie for a nice big rump roast for entertaining, at least 4.5lbs, it is roughly $38--40 for the roast. Add double the money for something prime or standing rib roast, etc. When you slice down a steak from any of those, figure $10/portion or more minimum, which is what you'd pay per steak for BBQ grilling some ny strips or ribeyes. You can go to Costco if you want something slightly bigger for around the same price. I can't think what eye of round costs for pound because it's been a very long time since I bought the leaner cuts you'd actually use for jerky. I'm grilling outside and want a traditional steak cut, stir frying with filet, or else making chuck into stew.
But, I know from the times I've used my dehydrator, that the lean stuff is best to dehydrate into jerky, no fibrous connecting tissue, no ribbons of fat, and a big 4lb roast will yield not even 1/2 pound of jerky. Homemade is best! Big pieces that aren't processed or too small or too sweet. There's some other tricks brands use to stretch the weight of a bag.

There's a big difference. Jerky is thin sliced and dried quickly, has a very low water activity and is tough & chewy - completely dried.

Biltong is dried slowly over many days and has a much higher water activity, the inside is still pink and is still very soft.
