It's a mix of hearty meat flavors and the bright and somewhat sour vinegary taste of pickled vegetables. Usually the bread is a bit more on the crunchy side. Typically there's a very light creamy spread of some kind, maybe with a bit of dill. Not too much though.
They're great, highly recommend. Just a little different from your expected sandwich taste profile, in way that is very welcome. I think if you've had Pho it's a similar sort of translation from western noodle soups to Pho as it is from western sandwiches to Banh Mi - a bit lighter and brighter, but the richness is there where it really counts.
